 A very smooth medium roast that is sweet but acid, with a hint of  mocha.   Along the mountainous Andean backbone of Latin America, is the Popayan coffee growing region in south-west Colombia.   A classic coffee, the body tends to be medium, the acidity vibrant but not overbearing.  This is a coffee that can stand on it’s own merits and is a smooth balanced taste that is welcome by coffee drinkers who like coffee but not the strong taste of other coffees from Colombia.

A traditional favorite, Colombia Popayán grows in the rich soil of the deeply admired Popayán region of the Sierra Nevadas.      

The Dutch introduced arabica coffee trees to Latin America in 1718. Today Central and South America produce more coffee than any other growing region in the world. Coffees of the Americas are admired for their balance, simplicity, straightforward berry notes, and clean finishes. Collectively, they represent the taste qualities most Americans equate with coffee and inspire the descriptive phrase, "the classic American cup."

Organic coffee is produced under strict certification guidelines, and is grown without the use of potentially harmful artificial pesticides or fertilizers;

Fair trade coffee is produced by small coffee producers who belong to cooperatives; guaranteeing for these cooperatives a minimum price, though with historically low prices, current fair-trade minimums are lower than the market price of only a few years ago.

TransFair USA is the primary organization currently overseeing Fair Trade coffee practices in the United States, while the Fairtrade Foundation does so in the United Kingdom
